Savory Pork And Apple Stir-Fry
- 1 (7.2 oz.) pkg. rice pilaf
- 1 1/3 c. apple juice or cider
- 1 c. water
- 1 lb. boneless pork or chicken breast
- 1 tsp. paprika
- 1 tsp. thyme
- 1/2 tsp. poultry seasoning
- 1/2 tsp. salt
- 2 Tbsp. butter
- 2 medium apples, sliced
- 1 tsp. cornstarch
- 1/3 c. chopped walnuts
- Prepare rice pilaf as package directs, substituting 1 cup water and 1 cup apple juice for water.
- Cut meat into 1 1/2 x 1/4-inch strips.
- Toss with combined seasonings.
- Melt butter in a large skillet over medium heat.
- Saute meat 3 to 4 minutes until no longer pink.
- Add apples and stir-fry 2 to 3 minutes or until apples are almost tender.
- Add combined 1/3 cup apple juice and cornstarch.
- Stir-fry 1 to 2 minutes until thickened to form glaze. Stir in nuts.
- Top rice with pork or chicken mixture.
