Sausage-Beef Casserole
- 1 lb. smoked sausage, cut into 1 1/2-inch pieces
- 1 lb. beef, cut into 1-inch cubes
- 1 large onion, sliced
- 2 cloves minced garlic
- 2 seeded and quartered green bell peppers
- 4 medium potatoes, peeled and quartered
- 2 (1 lb.) cans red kidney beans, drained
- 1 tsp. basil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 beef bouillon cubes
- 1 c. hot water
- Brown smoked sausage and beef and place in a 2 1/2 to 3-quart casserole.
- Cook onion and garlic in 1 tablespoon drippings until tender.
- Add green bell peppers and cook 1 minute longer, stirring.
- Add to meat in casserole.
- Add beans and potatoes to casserole.
- Sprinkle with basil, salt and pepper.
- Toss lightly. Dissolve bouillon cubes and hot water.
- Pour over casserole. Cover and bake at 350u0b0 for 1 hour and 15 minutes or until potatoes are tender.
