Santa Fe Meat Loaf
- 1 large egg, lightly beaten
- 3 tablespoons grated fresh onion
- 1 (10-ounce) can diced tomatoes with green chiles, un-drained
- 1 (1.1-ounce) package fiesta ranch-style dip mix (such as Hidden Valley)
- 1 (8.75-ounce) can whole-kernel corn, drained
- 1/2 teaspoon pepper
- 1 teaspoon Worcestershire sauce
- 1 1/2 pounds ground sirloin
- 1/4 cup Italian-seasoned breadcrumbs
- Cooking spray
- Preheat oven to 350u0b0.
- Combine first 7 ingredients in a large bowl; crumble beef over vegetable mixture. Add breadcrumbs, and stir until well blended.
- Shape beef mixture into an 8 x 4-inch loaf on a broiler pan coated with cooking spray. Bake at 350u0b0 for 1 hour or until a thermometer registers 160u0b0. Cool 5 minutes.
