Southwest Black Bean Chili
- 1/2 lb. chorizo sausage or Italian sausage
- 1 medium onion, chopped
- 2 (15 oz.) cans black beans, rinsed and drained
- 1 (14 1/2 oz.) can ready-to-serve beef broth
- 1 (15.5 oz.) can pinto beans, rinsed and drained
- 2 (15 oz.) cans tomato sauce
- 2 (4 oz.) cans chopped green chilies
- 1 to 2 Tbsp. chili powder
- 3 tsp. cumin
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 to 1/4 tsp. cayenne pepper
- Remove casing from sausage; discard.
- Crumble sausage.
- Cook sausage and onion in a Dutch oven or large saucepan over medium-high heat for 5 to 8 minutes or until onion is crisp-tender.
- Stir in remaining ingredients; mix well.
- Cook 10 to 15 minutes or until thoroughly heated and flavors are blended, stirring occasionally.
