Black Walnut Cake
- 1/2 c. butter, softened
- 1/2 c. Crisco
- 2 c. sugar
- 5 eggs, separated
- 1 c. buttermilk
- 1 tsp. soda
- 2 c. all-purpose flour
- 1 tsp. vanilla
- 1 c. chopped black walnuts
- 1 (3 to 4 oz.) can coconut
- 1/2 tsp. cream of tartar
- Cream butter and Crisco.
- Gradually add sugar, beating well on medium speed of electric mixer.
- Add eggs yolks, one at a time, beating well after each addition.
- Combine buttermilk and soda. Stir until soda dissolves.
- Add flour to butter mixture alternately with buttermilk mixture, beginning and ending with flour.
- Mix well after each addition.
- Stir in vanilla, walnuts and coconut, stirring well.
- Beat egg whites (at room temperature) with cream of tartar until soft peaks form.
- Fold gently into batter.
