Apple-Cherry Crisp
- 4 large cooking apples, peeled, cored, and sliced
- 2 (16-ounce) cans tart red pitted cherries, drained
- 1 teaspoon grated lemon rind
- 1/2 cup lemon juice
- 1/2 teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1 cup sugar
- Pinch of salt
- 1/2 cup butter, softened
- Vanilla ice cream (optional)
- Combine apples, cherries, lemon rind, juice, and cinnamon; toss well. Spoon mixture into a lightly greased 13- x 9- x 2-inch baking dish
- Combine flour, sugar, and salt in a large mixing bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Sprinkle topping over fruit mixture. Bake, uncovered, at 350u0b0 for 55 minutes or until apples are tender and topping is golden brown. Serve warm with ice cream, if desired.
