Marmalade Tea Bars
- 1 (12 oz.) jar marmalade
- 1/2 c. chopped walnuts
- 1/2 c. flaked coconut
- 1 1/2 c. sifted flour, regular
- 1 tsp. baking powder
- 1/4 tsp. soda
- 1/4 tsp. salt
- 1/2 c. butter
- 1 c. firmly packed brown sugar
- 1 egg
- 2 Tbsp. orange juice
- 1 c. quick cooking oatmeal
- Combine marmalade, walnuts and coconut.
- Set aside.
- Sift baking powder, soda, salt with flour.
- Cream butter in mixing bowl. Gradually add brown sugar.
- Continue creaming until light and fluffy.
- Add egg and orange juice and beat well.
- Stir in rolled oats and dry ingredients.
- Spread half of batter in well-greased 13 x 9-inch pan.
- Cover with orange/nut mixture.
- Drop remaining batter by teaspoons over filling.
- Spread carefully.
- Bake at 350u0b0 for 30 to 35 minutes until golden brown.
- Frost warm.
- Cool and cut into bars, or omit frosting, cut into 3-inch squares and top with vanilla ice cream.
