Old-Fashioned Vegetable Soup
- 1 1/2 lb. beef or ham bones with meat
- 2 large carrots, chopped
- 28 oz. tomatoes, undrained
- 1 1/2 tsp. salt
- 1/2 tsp. whole basil
- 1/2 tsp. whole marjoram
- 1 c. frozen corn
- 1/2 c. macaroni
- 8 c. water
- 3 stalks celery, chopped
- 2 medium onions, chopped
- 1 bay leaf
- 1/2 tsp. pepper
- 1/2 tsp. whole thyme
- 2 c. frozen lima beans
- 1 c. frozen peas
- Combine all ingredients except frozen vegetables and macaroni in a large Dutch oven.
- Bring to boil; cover.
- Reduce heat and simmer for 1 hour.
- Add frozen vegetables and return to a boil. Reduce heat and simmer, uncovered, for 15 minutes.
- Stir in macaroni and continue to cook for 10 to 12 minutes.
- Remove bay leaf.
- Makes 3 1/2 quarts.
