Brassadella
- 2 1/2 c. flour
- 2 1/2 tsp. baking powder
- pinch of salt
- 1 c. sugar
- 1 stick butter, melted and cooled
- 2 large eggs, beaten
- grated zest of 1 lemon or 1 tsp. lemon extract
- 1 to 2 Tbsp. milk (if needed)
- Stir together flour, baking powder, salt and sugar.
- Make a well in the center.
- Pour in butter, eggs and lemon.
- Mix thoroughly, kneading well so it is smooth.
- If dough won't hold together, add some milk.
- Should be the consistency of pie dough or a cookie dough that could be rolled out.
- Should be stiff enough to hold its shape.
- Shape the dough in a circle, like a wreath.
- Place in a buttered 9-inch round cake pan.
- Bake at 375u0b0 for 25 to 30 minutes.
- Cool.
- Slice for serving.
- Serve as a cookie or biscuit with wine.
