Holiday Sweet Potatoes
- 3 large sweet potatoes (about 3 1/2 lb.)
- 1 (20 oz.) can pineapple chunks in their own juice
- 1 small orange, sliced
- 1/2 medium-size lemon, sliced
- 1 c. packed dark brown sugar
- 1/2 c. dark seedless raisins
- 4 Tbsp. butter (1/2 stick)
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground allspice
- 1 (11 oz.) can mandarin orange sections, drained
- 2 medium-size firm bananas, sliced
- 1/2 c. pecans, toasted and chopped
- 1/2 c. miniature marshmallows
- In 5-quart saucepot over high heat, heat sweet potatoes and enough water to cover to boiling.
- Reduce heat to low; cover and simmer 30 to 40 minutes, until potatoes are fork tender.
- Drain potatoes; cool slightly until easy to handle, then peel and cut potatoes into 1/2-inch thick slices.
