Holiday Sweet Potatoes

  1. In 5-quart saucepot over high heat, heat sweet potatoes and enough water to cover to boiling.
  2. Reduce heat to low; cover and simmer 30 to 40 minutes, until potatoes are fork tender.
  3. Drain potatoes; cool slightly until easy to handle, then peel and cut potatoes into 1/2-inch thick slices.
