Mediterranean Nachos
- 3 pita breads, each about 6-inches in diameter
- 1 large clove garlic
- 3/4 lb. tomatoes, seeded and diced (about 1 3/4 c.)
- 6 oz. Mozzarella cheese, shredded (about 1 1/2 c.)
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. balsamic vinegar
- 1 1/2 tsp. chopped fresh basil or 1/2 tsp. dried basil, crumbled
- 1/4 tsp. salt
- pinch crushed red pepper flakes
- Heat oven to 400u0b0.
- Cut each pita horizontally in half.
- Cut each half into quarters.
- Arrange pieces cut-side up on a cookie sheet.
- Bake until golden brown, 5 to 6 minutes.
- Remove, but keep oven on.
- Gently rub tops of pita quarters with garlic cloves taking care not to break pitas.
- Arrange them on an ovenproof plate.
- In medium bowl, combine tomatoes, Mozzarella, parsley, vinegar, basil, salt and red pepper flakes.
- Spoon mixture onto pita pieces.
- Bake until cheese melts, about 5 minutes.
