Bacon And Tomato Potato Skins

  1. Clean and poke potatoes with a fork; cook on High in microwave 17 to 22 minutes or until almost tender.
  2. Rearrange once.
  3. Halve each potato lengthwise.
  4. Scoop out the inside of each half, leaving about 1/4-inch thick shell.
  5. Cover and chill the leftovers.
  6. Combine the oil, chili powder and pepper.
  7. Brush the inside with oil mixture.
  8. Cut the potato halves lengthwise; sprinkle with bacon, tomato and onion.
  9. Top with cheese.
  10. Bake in a 450u0b0 oven for 10 to 12 minutes until cheese melts.
  11. Serve with sour cream.
