Bacon And Tomato Potato Skins
- 6 large baking potatoes
- 2 tsp. cooking oil
- 1 tsp. chili powder
- 2/3 c. chopped Canadian style bacon
- 1 medium tomato, finely chopped
- 2 Tbsp. finely chopped onion
- 1 c. cheese
- 1/2 c. sour cream (optional)
- Clean and poke potatoes with a fork; cook on High in microwave 17 to 22 minutes or until almost tender.
- Rearrange once.
- Halve each potato lengthwise.
- Scoop out the inside of each half, leaving about 1/4-inch thick shell.
- Cover and chill the leftovers.
- Combine the oil, chili powder and pepper.
- Brush the inside with oil mixture.
- Cut the potato halves lengthwise; sprinkle with bacon, tomato and onion.
- Top with cheese.
- Bake in a 450u0b0 oven for 10 to 12 minutes until cheese melts.
- Serve with sour cream.
