Miniature Cheese Cake

  1. Buttertmall muffin pans generously.
  2. Sprinkle crushed graham crackers
  3. until
  4. pans are well coated.
  5. Preheat oven at 350u0b0.
  6. In an electric mixer, beat soft cream cheese, sugar and egg
  7. yolks real
  8. well.
  9. Beat
  10. egg
  11. whites stiff and fold into cheese mixture.
  12. Fill muffin tins 3/4 full.
  13. Bake 15 minutes. Cool and allow to fall.
  14. Mix sour cream with sugar and vanilla well.
  15. Put a
  16. dab on top of each muffin.
  17. Top with strawberry preserves or any type fruit as cherry pie filling, blackberry, etc.
  18. Bake
  19. at 400u0b0 for 5 minutes.
  20. Allow to cool or chill as they
  21. will
  22. come out of pans easier.
  23. These freeze very well. Makes 4 dozen.
