Veal Shanks

  1. Coat 4 pieces of
  2. veal shanks with flour.
  3. Heat cooking oil in heavy skillet
  4. and add minced garlic clove.
  5. Add shanks and
  6. brown on
  7. both
  8. sides.
  9. Add
  10. chopped
  11. onion
  12. and chopped carrots.
  13. Add celery,
  14. tomatoes,tay
  15. leaves and white wine. Cook
  16. slowly
  17. 1 1/2 to 2 hours.
  18. Add salt and pepper to taste. Sprinkle
  19. with parsley and grated lemon peel.
  20. Serve with rice or spaghetti. Makes 4 servings.
