Veal Shanks
- 4 pieces veal shanks
- 3 Tbsp. flour
- 1/2 c. cooking oil
- 1 minced garlic clove
- 1 onion, chopped
- 2 carrots, chopped
- 1 stalk celery, chopped
- 1 can whole tomatoes, chopped
- 2 bay leaves
- 1 c. dry white wine
- salt and pepper
- 1/4 c. parsley, chopped
- 1 lemon peel, grated
- Coat 4 pieces of
- veal shanks with flour.
- Heat cooking oil in heavy skillet
- and add minced garlic clove.
- Add shanks and
- brown on
- both
- sides.
- Add
- chopped
- onion
- and chopped carrots.
- Add celery,
- tomatoes,tay
- leaves and white wine. Cook
- slowly
- 1 1/2 to 2 hours.
- Add salt and pepper to taste. Sprinkle
- with parsley and grated lemon peel.
- Serve with rice or spaghetti. Makes 4 servings.
