Potato Soup
- 3 lb. potatoes (peeled weight)
- 1 c. onions, chopped
- 1 c. celery, chopped
- 10 c. water
- 4 oz. chicken base
- 1/2 tsp. black pepper
- 1 Tbsp. Crazy Jane salt
- 6 c. milk
- 8 Tbsp. margarine
- 1 c. flour
- Peel and dice potatoes into large pieces (approximately 1/2 x 1-inch).
- In large pot, put diced potatoes, chopped onions, chopped celery, water, chicken base, pepper and Crazy salt. Simmer uncovered for 20 minutes.
- Add milk to the soup and simmer altogether to 170u0b0.
- In a separate pan, blend melted margarine and flour together to form a smooth paste.
- Remove approximately 1 quart of soup broth and blend it with the margarine paste until smooth.
- Using a wire whip, add this back with the rest of the soup.
- Blend well and simmer for 20 minutes.
