Molasses-Bran Muffins
- 1 1/4 cups unprocessed wheat bran
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 3/4 cup unsweetened applesauce
- 1/2 cup fat-free milk
- 1/3 cup dark molasses
- 1/4 cup egg substitute
- 1 tablespoon vegetable oil
- 1/2 cup raisins
- Cooking spray
- Preheat oven to 400u0b0.
- Combine first 5 ingredients in a bowl; make a well in center of mixture. Combine applesauce and next 4 ingredients; add to dry ingredients, stirring just until moistened. Stir in raisins.
- Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400u0b0 for 18 to 20 minutes or until golden. Remove from pans immediately, and place on a wire rack.
