Acapulco Delight
- 2 lb. ground beef
- 1 pkg. taco seasoning mix
- 6 tortilla shells
- 2 c. grated Cheddar cheese
- 17 oz. refried beans
- 1 1/2 c. sour cream
- 1/2 c. Monterey Jack cheese, cubed
- 1 c. chopped lettuce
- 1 c. chopped tomatoes
- 1/2 c. sour cream
- Brown beef and drain.
- Stir in taco seasoning, adding water according to package directions.
- Simmer 5 minutes.
- Place 2 tortillas in bottom of a greased 9 x 13-inch pan.
- Spread 1/2 of meat mixture over tortillas and sprinkle with 1/2 cup Cheddar cheese.
- Top with 2 more tortillas.
- Spread with refried beans. Cover with 1 1/2 cups sour cream.
- Place 2 remaining tortillas over mixture and cover with remaining meat mixture and Cheddar cheese. Top with Monterey Jack cheese.
- Bake at 350u0b0 for 20 to 30 minutes, until bubbly.
- Remove from oven and top with lettuce, tomatoes and 1/2 cup sour cream.
