Strawberry Pie
- 1 1/12 c. sugar
- 1/2 tsp. strawberry flavoring
- 1/2 tsp. red food coloring
- 1 1/2 c. boiling water
- 4 Tbsp. cornstarch dissolved in 1/2 c. water
- 1 c. Pastry Cream
- 1 prebaked deep 9-inch pie shell
- 1 1/2 pt. fresh strawberries, washed, hulled and kept whole if small or cut in half if large
- whipping cream for decorating
- 1/4 c. toasted and slivered almonds
- Make a glaze by adding sugar, strawberry flavoring and food color to boiling water in a saucepan.
- Add dissolved cornstarch and stir over medium heat until thickened.
- Remove and set aside.
- Add cool prepared Pastry Cream to the bottom of the pie shell.
- Pour in half pint of strawberries.
- Cover with half of the glaze and add remaining strawberries, covering with glaze.
- Decorate the edges with whipped cream.
- Sprinkle with almonds.
- Chill and serve.
