South-Of-The-Border Cranberry Sauce
- 1 tablespoon canola oil
- 1/2 cup chopped onion
- 1 1/4 cups sugar
- 1/2 cup water
- 1/4 cup port wine
- 1/4 teaspoon ground ginger
- 1 (12-ounce) package fresh cranberries
- 3 tablespoons chopped fresh cilantro
- 2 teaspoons grated orange rind
- 1 teaspoon grated lime rind
- 1 minced chipotle chile, canned in adobo sauce
- Heat oil in a medium saucepan over medium-high heat. Add onion, and saute for 4 minutes. Add sugar and the next 4 ingredients (through cranberries); bring to a boil. Reduce heat, and simmer for 8 minutes or until cranberries pop. Remove from heat, and stir in cilantro, orange rind, lime rind, and chile. Serve chilled or at room temperature.
