Fruit Bars
- 3/4 c. flour
- 3/4 c. sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. sunflower seeds
- 1 (6 oz.) pkg. dried fruit or apricots, finely chopped
- 2 eggs, beaten
- 2 Tbsp. oil
- 2 Tbsp. orange juice
- Preheat oven to 350u0b0.
- Line 8 x 8 x 2-inch pan with aluminum foil.
- Spray with nonstick cooking spray; set aside.
- In large bowl, combine flour, sugar, cinnamon, baking powder and salt. Stir in chopped fruit.
- Add eggs, oil and orange juice.
- Stir until well blended.
- Spread batter into foil-lined pan.
- Sprinkle sunflower seeds evenly over top.
- Bake until wooden pick inserted in center comes out clean, 20 to 25 minutes.
- Cool in pan on wire rack.
- Lift foil by ends onto cutting board.
- Fold back edges of foil and cut into 3 x 1-inch bars.
- Wrap individually in foil and freeze.
- Makes 24 bars.
