Autumn Soup
- 1 lb. ground beef
- 4 c. water
- 1 c. diced celery
- 2 tsp. salt
- 1 bay leaf
- 1 large can whole, crushed tomatoes
- 1 c. chopped onion
- 1 c. cut up carrots
- 1 c. cubed, pared potatoes
- 1/8 tsp. pepper
- 1/8 tsp. basil
- 1 box frozen green beans
- 2 c. beans
- 2 qt. water
- smoked pork hocks (about 1 1/2 lb.) or smoked sausage or beef
- 2 carrots, chopped
- 1 large onion, chopped
- 2 to 3 stalks celery, chopped
- 1 (16 oz.) can tomatoes
- 1 Tbsp. lemon juice
- 1 beef bouillon cube
- 1 clove garlic, chopped
- salt and pepper
- 1 tsp. chili powder
- Soak beans overnight.
- Simmer everything listed for 3 hours, then take out pork hocks, discard skin, fat and bones.
- Cut up meat and return to soup.
