Gourmet Pork Chops
- 4 (1-inch) loin pork chops
- salt and pepper
- 1/4 c. all-purpose flour
- 3 Tbsp. peanut oil
- 1/2 c. finely chopped onion
- 1 clove garlic, minced
- 1/2 c. dry white wine
- 1 c. chicken stock
- 1/2 lb. mushrooms, sliced
- 2 Tbsp. margarine
- 1/4 tsp. thyme
- 1 bay leaf
- Sprinkle chops with salt and pepper. Dredge in flour.
- Brown in hot oil over medium heat.
- Drain.
- Place in casserole.
- Set aside.
- Stir onion and garlic into drippings.
- Cook.
- Add wine and stock.
- Simmer 3 to 5 minutes.
- Saute mushrooms in butter.
- Add mushrooms, thyme and bay leaf to skillet.
- Pour wine sauce over chips.
- Cover.
- Bake at 350u0b0 for 45 minutes.
- Remove bay leaf.
