White Christmas Pie

  1. Sprinkle gelatin over cold water in a saucepan.
  2. Let stand 1 minute. Add 1/4 cup sugar, flour, salt and milk. Cook over low heat, stirring until the gelatin dissolves and mixture is hot. Remove from heat and chill until the consistency of unbeaten egg white. Add vanilla and almond extracts.
  3. Beat at medium speed with an electric mixer until smooth. Combine fruit and powdered sugar, tossing to coat.
  4. Set aside. Beat whipping cream until foamy. Gradually add 1/4 cup sugar, beating until soft peaks form.
  5. Fold fruit mixture, whipping cream and 1 cup coconut into gelatin mixture. Spoon into pastry shell. Sprinkle with remaining coconut. Chill 8 hours.
