Raisin-Applesauce Cake
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 1 egg
- 2 cups all-purpose flour, divided
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup applesauce
- 1 teaspoon grated lemon rind
- 1 cup raisins
- 1 cup chopped pecans
- Cream butter; gradually add sugar, beating well. Add egg, mixing well.
- Combine 1 1/2 cups flour, soda, salt, cinnamon, and nutmeg; add to creamed mixture. Stir in applesauce and lemon rind. Dredge the raisins and pecans in remaining 1/2 cup flour; stir to coat well. Fold into batter.
- Pour batter into a greased and waxed paper - lined 8 - inch square pan. Bake at 350u0b0 for 1 hour or until a wooden pick inserted comes out clean. Cool.
