Ma Casey'S Combination Crawfish Pasta
- 1/2 c. flour
- 1 stalk celery
- 1 1/2 pt. half and half
- 1 lb. crawfish tails, peeled
- 1 stick margarine (butter)
- 1 onion, finely chopped
- 8 to 10 oz. fettuccine noodles
- 1 clove garlic
- 1/4 c. chopped parsley
- 1/4 c. Parmesan cheese
- 1/4 c. Romano cheese
- 1/2 bunch shallots (all parts), finely chopped
- 1 green pepper
- seasoning to taste
- Melt butter; saute vegetables.
- Add flour and cook for 5 minutes, stirring constantly.
- Add crawfish, half and half and cheeses, being careful not to let mixture stick to bottom.
- (It will burn easily.)
- Add seasoning to taste.
- Simmer on low heat for 15 minutes.
- Serve on cooked pasta.
