Baked Trout With Olive-Tomato Relish

  1. Preheat oven to 400u0b0.
  2. Combine first 5 ingredients in a small bowl.
  3. Line a baking sheet with foil; coat foil with cooking spray. Place fish, skin side down, on prepared baking sheet. Sprinkle evenly with parsley, salt, and pepper. Bake at 400u0b0 for 8 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with olive mixture.
