Mexican Strata
- 12 slices bread
- 12 oz. bulk pork sausage, cooked and drained
- 3/4 c. (3 oz.) shredded Monterey Jack cheese
- 1 1/2 c. (6 oz.) shredded pepper cheese
- 1 1/2 c. sliced zucchini (optional)
- 6 eggs
- 3 1/2 c. milk
- 1 (8 oz.) can tomato sauce
- 1/3 c. green chili salsa or 1/3 c. tomato sauce
- 1/4 tsp. salt
- Cut centers out of bread.
- Set centers aside.
- Place remaining bread pieces in greased 9 x 13 x 2-inch baking dish.
- Layer sausage, cheeses and zucchini.
- Beat eggs, add milk, tomato sauce, salsa and salt.
- Pour over layers.
- Place cut out pieces of bread on top.
- Cover with foil and refrigerate overnight.
- Bake 55 minutes at 325u0b0, uncovered.
- Let stand 10 minutes before serving. Serves 12.
