The Ultimate Edible Stadium

  1. Prepare the Football Field Layered Dip: Stir together beans and salsa verde in a saucepan over medium, and cook, stirring occasionally, until heated through, about 5 minutes. Remove from heat.
  2. Cook beef in a large skillet over medium-high, stirring until browned and crumbled, 4 to 6 minutes. Stir in taco seasoning and water, and cook, stirring occasionally, until liquid is absorbed, about 7 minutes. Remove from heat.
  3. Combine avocados, mayonnaise, lime juice, cumin, salt, and pepper in a bowl; mash with a potato masher or a fork to desired consistency.
  4. Spread bean mixture in a 13- x 9-inch glass or ceramic dish. Top with beef mixture, cheese, tomatoes, and scallions. Carefully spread avocado mixture over top. Place sour cream in a piping bag or a small ziplock plastic freezer bag, snipping 1 corner of ziplock bag to make a small hole. Pipe sour cream in lines over top of avocado mixture to resemble the goal lines, side lines, and yardage lines of a football field.
  5. Prepare the Goal Posts: Assemble smoked meat sticks to resemble 2 goal posts, attaching pieces (3 short meat sticks for the top of each goal post and 1 long meat stick half for the main pole of each goal post) with wooden picks.
  6. Make a small hole in center of each cheese block half with an ice pick or knife; carefully push the main pole of 1 Goal Post into hole until secure. (Do not go all the way through.) Repeat with remaining cheese block half and Goal Post.
  7. Prepare the Red Team Deviled Eggs: Cut 1/2- to 1-inch off the narrow end of each egg, discarding small white end of egg. Carefully remove yolks, and place in a bowl; reserve egg white bottoms. Add mayonnaise, harissa, vinegar, salt, paprika, and pepper; stir until smooth. Place egg yolk mixture in a piping bag or a small ziplock freezer plastic bag, snipping 1 corner of ziplock bag to make a small hole. Pipe filling into egg white bottoms. Cut out bottom and part of 1 side of each green olive to resemble the opening of a football helmet. Place 1 "helmet" in center of each egg.
  8. Prepare the Green Team Deviled Eggs: Cut 1/2- to 1-inch off the narrow end of each egg, discarding small white end of egg. Carefully remove yolks, and place in bowl of a mini food processor; reserve egg white bottoms. Add spinach, mayonnaise, lime juice, wasabi paste, and salt to yolks, and process until smooth. Place egg yolk mixture in a piping bag or a small ziplock freezer plastic bag, snipping 1 corner of ziplock bag to make a small hole. Pipe filling into egg white bottoms. Cut out bottom and part of 1 side of each black olive to resemble the opening of a football helmet. Place 1 "helmet" in center of each egg.
  9. Prepare the Cheerleader and Referee Deviled Eggs: Cut 1/2- to 1-inch off the narrow end of each egg, discarding small white end of egg. Carefully remove yolks, and place in a bowl; reserve egg white bottoms. Add mayonnaise, vinegar, salt, pepper, and sugar to yolks; stir until smooth. Place egg yolk mixture in a piping bag or a small ziplock freezer plastic bag, snipping 1 corner of ziplock bag to make a small hole. Pipe filling into egg white bottoms. Place pimento slices on 6 eggs to resemble hair bows. Cut wide ends of black olives, and place on top of remaining 3 eggs to resemble black referee caps. Cut remaining part of black olives into thin slices, and place around "referee" eggs to resemble referee stripes.
  10. To Prepare the Stadium Seats: Assemble boxes according to package directions. Trim tallest part (back of box) to 8-inches in total height. Cover and line outside and inside of each box with foil. Fill foil-covered boxes with desired fillings.
  11. Assemble the Stadium: Place the Football Field Layered Dip in center of a large table. Place Goal Posts at each end of "football field." Place the Red Team Deviled Eggs and the Green Team Deviled Eggs on opposite sides of "football field." Place the Cheerleader and Referee Deviled Eggs behind the Goal Posts. Arrange the filled Stadium Seats around the football field. Stack canned beverages in the spaces between filled Stadium Seats.
