Potato-Stuffed Meat Loaf
- 2 (10 oz.) red skinned potatoes
- 1 Tbsp. vegetable oil
- 3 c. shredded green cabbage
- 1 medium onion, finely chopped
- 7 oz. lean ground beef
- 7 oz. lean ground turkey
- 1/4 c. plus 2 Tbsp. plain dried bread crumbs
- 2 large eggs
- 1 c. canned crushed tomatoes
- 1 Tbsp. dried oregano, crumbled
- 1 tsp. dried basil, crumbled
- 1/2 tsp. celery salt
- 1/4 tsp. black pepper
- chopped parsley (to garnish)
- In medium saucepan, add potatoes and cold water to cover. Partially cover and bring to a boil.
- Reduce heat and simmer until tender when pierced, 30 to 35 minutes.
- Preheat oven to 325u0b0. Line a 9 x 5-inch loaf pan with a sheet of aluminum foil; allow foil to overlap in large nonstick skillet.
- Heat oil.
- Add cabbage and onion; saute until well browned, 10 to 12 minutes.
