Spinach Salad With Pears And Blue Cheese
- 1 cup walnuts, chopped
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/4 cup extra-virgin olive oil
- Salt and pepper
- 1 (5 oz.) bag baby spinach
- 2 endives (8 oz.), leaves separated
- 1 pear, cored and sliced
- 1/2 cup crumbled blue cheese
- Preheat oven to 350u0b0F. Spread nuts on a lined baking sheet and toast until fragrant, 7 minutes, shaking once. Let cool.
- Whisk lemon juice, mustard, honey and oil in a medium bowl. Season with salt and pepper.
- Place spinach, endives and pear in a large serving bowl and drizzle with dressing. Toss to coat. Sprinkle salad with nuts and cheese, or serve with nuts and cheese on the side. Serve immediately.
