Christmas Bread
- 1/2 c. soft margarine
- 3/4 c. sugar
- 1 tsp. vanilla
- 2 eggs
- 2 3/4 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- 1/3 c. nuts, finely chopped
- 1/3 c. cherries, chopped
- 1/3 c. semi-sweet chocolate pieces
- 1/3 c. raisins
- 1/2 c. soft margarine
- 1/2 c. confectioners sugar
- 1 tsp. lemon rind
- 2 Tbsp. lemon juice
- Blend together margarine, sugar and vanilla.
- Beat in eggs one at a time.
- Sift together flour, baking powder and salt. Gradually blend into first mixture alternately with milk.
- Stir in nuts, cherries, chocolate and raisins.
- Turn into greased 9 x 5 x 3-inch pan.
- Bake at 350u0b0 for 1 hour and 5 to 10 minutes.
- Remove from pan; cool.
- Spread with icing.
