Spicy Low-Fat Jambalaya
- 2 slices turkey ham or ham, cut into cubes (approximately 4 oz.)
- 1/2 c. onion, chopped
- 1/2 c. bell pepper, chopped
- 2 cloves garlic, chopped
- 2 bay leaves
- 2 tsp. thyme
- 1 tsp. parsley flakes
- 2 fresh cayenne peppers, chopped, or 1/4 tsp. pepper flakes (optional, but recommended)
- 1/4 tsp. black pepper
- 1 (15 oz.) can chicken broth
- 1 (15 oz.) can tomato sauce
- 1/2 can water
- 1 c. rice
- 1/2 tsp. oil
- In nonstick 12-inch skillet, heat oil on medium; saute onion and bell pepper for 1 minute.
- Add chicken broth, tomato sauce, water, ham, garlic, parsley, thyme and cayenne.
- Stir.
- Bring to a boil.
- Add rice.
- Stir.
- Add bay leaves on top.
- Reduce heat to a simmer, cover and cook for 20 minutes.
- Uncover; let sit 5 minutes.
- Fluff with a fork and serve.
- Makes 2 large servings (352 calories and 4 1/2 grams fat per serving).
