Spicy Low-Fat Jambalaya

  1. In nonstick 12-inch skillet, heat oil on medium; saute onion and bell pepper for 1 minute.
  2. Add chicken broth, tomato sauce, water, ham, garlic, parsley, thyme and cayenne.
  3. Stir.
  4. Bring to a boil.
  5. Add rice.
  6. Stir.
  7. Add bay leaves on top.
  8. Reduce heat to a simmer, cover and cook for 20 minutes.
  9. Uncover; let sit 5 minutes.
  10. Fluff with a fork and serve.
  11. Makes 2 large servings (352 calories and 4 1/2 grams fat per serving).
