Chicken Divan(Microwave)
- 1 lb. fresh broccoli
- 1/2 c. water
- 4 chicken breast halves, boned and skinned
- 1/4 c. dry white wine
- 1/2 tsp. dried whole basil
- 1 Tbsp. butter
- 1/4 lb. fresh mushrooms, sliced
- 1 (8 oz.) carton sour cream
- 1/4 tsp. curry powder
- 1/3 c. grated Parmesan cheese
- Wash, trim and remove lower stalks of broccoli.
- Divide into equal size spears.
- Arrange broccoli in microwave dish with water; cover and microwave on High 8 to 10 minutes or until tender, turning dish every 4 minutes.
- Drain.
- Arrange broccoli so flowerets face outside of dish.
- Cut chicken into 2 x 1/2-inch strips.
- Place in shallow baking dish without overlapping. Combine wine and basil; pour over chicken.
- Cover and microwave on Medium 7 to 9 minutes or until chicken is no longer pink.
- Combine butter and mushrooms in 1-quart casserole.
- Cover and microwave on High 2 to 3 minutes; drain.
- Remove chicken from wine mixture, reserving 1/4 cup.
- Layer chicken over broccoli in center of dish. Top with mushrooms.
- Combine sour cream, curry powder and reserved wine mixture; spread over mushrooms.
- Sprinkle with Parmesan cheese.
- Microwave, uncovered, 8 minutes on High, turning after 4 minutes.
