Banana Bread
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup "measures-like-sugar" calorie-free sweetener
- 2 tablespoons margarine, melted
- 4 medium-sized very ripe bananas, peeled and mashed
- 1 large egg, lightly beaten
- Cooking spray
- Preheat oven to 350u0b0.
- Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients in a large bowl. Combine sweetener and next 3 ingredients; add to flour mixture, stirring just until moist.
- Pour batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350u0b0 for 50 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.
