Taco Quiche
- 1 (9 1/2-inch) pastry shell
- 1 Tbsp. oil
- 1/4 c. chopped onion
- 1 large clove garlic, minced
- 1/2 lb. lean ground beef
- 1 to 2 tsp. chili powder
- 1/2 tsp. dried oregano leaves
- 1/2 tsp. salt
- 1/8 tsp. cayenne
- 1 Tbsp. catsup
- few dashes of red pepper sauce
- 3 eggs
- 1 1/2 c. half and half
- 1/2 tsp. salt
- 2 Tbsp. canned, diced green chilies
- 1 1/2 c. shredded Cheddar cheese
- 1 c. shredded Jack cheese
- Bake pastry shell at 400u0b0 for 7 minutes.
- Heat oil in skillet. Saute onion and garlic until soft.
- Stir in ground beef, chili powder, oregano, salt, cayenne, catsup and red pepper sauce. Brown meat; break up into crumbly mixture.
- Drain off any liquid. Spoon into baked pie shell.
- Beat eggs.
- Mix in half and half, salt, chilies and cheese.
- Pour mixture over meat.
- Bake at 400u0b0 for 40 to 45 minutes until center is set and a knife comes out clean.
- Let rest 15 minutes before serving.
