Green Bean Salad With Blue Cheese Dressing
- 1/4 cup low-fat sour cream
- 1 tablespoon light mayonnaise
- 2 tablespoons low-fat buttermilk
- 2 tablespoons crumbled blue cheese
- 1/2 teaspoon fresh lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups trimmed and halved green beans (about 8 ounces)
- 1/3 cup finely chopped red onion
- 2 slices 40%-less-fat bacon (such as Gwaltney), cooked and crumbled
- Combine first 7 ingredients in a small bowl; stir with a whisk.
- Steam green beans, covered, 14 minutes or until crisp-tender. Rinse with cold water. Drain well, and pat dry with paper towels.
- Combine beans and onion in a large bowl; add dressing, and stir gently. Sprinkle evenly with crumbled bacon.
