Krum Kake
- 4 eggs
- 2/3 cup superfine sugar
- 1/4 cup plus 2 tablespoons all-purpose flour
- 2 cups whipping cream
- 2 tablespoons sugar
- 2 teaspoons vanilla extract
- Fresh blueberries
- Combine eggs and 2/3 cup sugar in a medium mixing bowl; beat well. Gradually add flour, beating until well blended.
- Spoon 2 tablespoons batter onto a greased and floured baking sheet. Spread batter with a spatula to form a 4 1/2-inch circle. Repeat procedure with remaining batter, baking two circles at a time. Bake at 400u0b0 for 3 minutes or until edges are lightly browned. Remove circles from baking sheet immediately with a long flat spatula. Hold each circle gently, and fold the sides toward the center to form a cone. Stand cone in a tall glass for 2 minutes or until cooled.
- Beat whipping cream until foamy. Add 2 tablespoons sugar and vanilla, beating until stiff peaks form. Spoon whipped cream into cones, and top with blueberries.
