Curried Shrimp

  1. In large nonstick saucepan, heat the oil.
  2. Add the pepper, onion and garlic.
  3. Cook, stirring as needed until softened, about 5 minutes.
  4. Add the flour, curry, ginger and salt.
  5. Cook, stirring constantly until fragrant, about 30 seconds.
  6. Add the broth; cook stirring constantly until the mixture comes to a boil and thickens, about 2 minutes.
  7. Add the shrimp and cook, stirring as needed until heated through, about 3 minutes.
  8. Serve the rice topped with shrimp mixture.
