Oatmeal-Molasses Cookies
- 2 cups sugar
- 1 cup vegetable oil
- 1/3 cup molasses
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups quick-cooking oats, uncooked
- 1 cup raisins
- 1 cup flaked coconut (optional)
- Preheat the oven to 350u0b0. Combine first 4 ingredients in a large mixing bowl. Beat at medium speed of an electric beater until smooth.
- Combine flour and next 4 ingredients; stir well. Add to sugar mixture, mixing well. Stir in oats, raisins, and, if desired, coconut.
- Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets. Bake at 350u0b0 for 10 minutes. Cool slightly on cookie sheets; remove cookies to wire racks, and let cool completely.
