Angel Food Cake

  1. Set out tube pan; don't grease.
  2. Measure and sift 3 times flour and confectioners sugar.
  3. Measure into large bowl egg white, cream of tartar and salt.
  4. Beat until foamy.
  5. Gradually add 2 teaspoons at a time, sugar.
  6. Beat until stiff.
  7. Fold in vanilla and almond extracts.
  8. After flour and confectioners sugar is sifted 3 times, sift over meringue mixture.
  9. Fold in gently just until flour and sugar mixture disappears.
  10. Rush batter into pan and cut through with a knife.
  11. Bake until top springs back when touched.
  12. Invert on funnel and let cool completely.
