Angel Food Cake
- 1 c. cake flour (Softasilk)
- 1 1/2 c. confectioners sugar
- 1 1/2 c. egg white
- 1 1/2 tsp. cream of tartar
- 1/4 tsp. salt
- 1 c. sugar
- 1 1/2 tsp. vanilla extract
- 1 1/2 tsp. almond extract
- Set out tube pan; don't grease.
- Measure and sift 3 times flour and confectioners sugar.
- Measure into large bowl egg white, cream of tartar and salt.
- Beat until foamy.
- Gradually add 2 teaspoons at a time, sugar.
- Beat until stiff.
- Fold in vanilla and almond extracts.
- After flour and confectioners sugar is sifted 3 times, sift over meringue mixture.
- Fold in gently just until flour and sugar mixture disappears.
- Rush batter into pan and cut through with a knife.
- Bake until top springs back when touched.
- Invert on funnel and let cool completely.
