Nell'S Gumbo

  1. Make roux using hot oil; add flour.
  2. Stir until color of copper penny.
  3. Add vegetables, except tomatoes and okra.
  4. Cook until onions are transparent.
  5. Add the water; let simmer at least 1 hour.
  6. Add shrimp.
  7. After 10 minutes, add crabmeat.
  8. Salt to taste; add pepper.
  9. Add chopped okra and tomatoes.
  10. Cook for at least 20 minutes.
  11. When ready to serve, add gumbo file to individual bowls (about 1/2 teaspoon).
  12. Pour gumbo in bowl and serve with rice.
