Impossible Brunch Pie
- 1 (10 oz.) pkg. frozen chopped broccoli or chopped spinach, cooked and drained
- 1 c. plain yogurt
- 1 c. creamed cottage cheese (low-fat)
- 1/2 c. Bisquick baking mix
- 1/4 c. margarine or butter, melted
- 2 eggs
- 1 tomato, thinly sliced
- 1/4 c. grated Parmesan cheese
- Heat oven to 350u0b0.
- Grease pie plate (9-inch).
- Spread spinach or broccoli in plate.
- Beat yogurt, cottage cheese, baking mix, margarine and eggs until smooth, 15 seconds in blender on high speed or 1 minute with hand beater.
- Pour into plate.
- Before baking, top with tomato; sprinkle with Parmesan cheese.
- Then, bake until knife inserted between center and edge comes out clean, about 30 minutes.
- Cool 5 minutes.
- Makes 6 to 8 servings.
