Seafood Creole
- 1 can tomato paste
- 1 1/2 c. flour
- 1 c. oil
- 2 qt. water
- 1 can whole Ro-Tel tomatoes
- 1 can tomato sauce
- 3 stalks celery, chopped
- 1 bell pepper, chopped
- 2 large onions, chopped
- 1/2 lb. crab meat
- 3 c. okra, chopped
- 3 pods garlic, minced
- 1/4 c. parsley, chopped
- 1/3 c. green onion, chopped
- 2 tsp. salt
- Tony's creole seasoning
- Tabasco to taste
- red and black pepper to taste
- 1 1/2 to 2 lb. shrimp or crawfish
- Make roux by stirring flour and shortening over medium heat until well browned.
- In a large pan, mix roux, water, tomatoes and tomato sauce.
- Cook 5 minutes.
- Add celery, bell pepper, okra, onions and garlic.
- Cook 10 minutes.
- Add parsley, green onion, seafood, salt, red and black pepper and Tabasco.
- Cook 1 hour. Serve over rice.
