Seafood Creole

  1. Make roux by stirring flour and shortening over medium heat until well browned.
  2. In a large pan, mix roux, water, tomatoes and tomato sauce.
  3. Cook 5 minutes.
  4. Add celery, bell pepper, okra, onions and garlic.
  5. Cook 10 minutes.
  6. Add parsley, green onion, seafood, salt, red and black pepper and Tabasco.
  7. Cook 1 hour. Serve over rice.
