Creamy Ham Casserole
- 1 medium head cauliflower (2 lb.)
- 2 c. cubed ham, cooked
- 1 (3 oz.) can sliced mushrooms
- 4 Tbsp. butter or oleo
- 1/2 c. dairy sour cream
- 1 c. soft bread crumbs ( 1 1/2 slices)
- 1 Tbsp. butter or oleo
- 1/3 c. all-purpose flour
- 1 c. milk
- 1 c. (4 oz.) cubed sharp process American cheese
- Break cauliflower into buds (about 4 cups).
- Cook covered in boiling salted water until tender.
- Drain and combine ham and mushrooms in medium saucepan.
- Melt 4 tablespoons butter, stir in flour, add milk all at once.
- Cook and stir until mixture thickens and bubbles.
- Add cheese and sour cream to sauce.
- Stir well until cheese melts.
- Combine with cauliflower and ham mixture.
- Turn into 2-quart casserole.
- Combine crumbs and remaining oleo. Sprinkle over top.
- Bake uncovered for 40 minutes or until hot.
