Curried Pasta With Apple
- 1 (12-ounce) package tricolored rotini
- 2/3 cup plain fat-free yogurt
- 1/4 cup light mayonnaise
- 3 tablespoons fresh lime juice
- 2 teaspoons sugar
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground black pepper
- 1 Granny Smith apple, diced
- 1/4 cup dried cherries or sweetened dried cranberries
- 4 green onions, thinly sliced
- 2 carrots, grated
- 1/2 cup soy nuts* or slivered almonds, toasted
- Cook tricolored rotini according to package directions, omitting salt and fat; drain.
- Stir together yogurt and next 7 ingredients in a large bowl. Add pasta, apple, and next 3 ingredients, tossing to coat. Sprinkle with soy nuts. Serve immediately. Prep: 25 min., Cook: 15 min.
