Grilled Tilapia With Shirazi Salad
- 3/4 cup chopped fresh parsley
- 2 tablespoons diced peeled cucumber
- 2 tablespoons diced tomato
- 2 teaspoons diced red onion
- 2 teaspoons fresh lemon juice
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 1/4 teaspoon salt, divided
- 1/4 teaspoon pepper, divided
- 4 (6-ounce) tilapia fillets
- Cooking spray
- Lemon wedges
- Combine first 7 ingredients. Stir in 1/8 teaspoon each of salt and pepper. Cover salsa, and chill at least 30 minutes.
- Preheat grill.
- Sprinkle fish fillets with remaining 1/8 teaspoon each salt and pepper. Place fillets on grill rack coated with cooking spray; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Serve with salsa and lemon wedges.
