Lemon Chicken Cutlets

  1. Trim excess fat from chicken.
  2. Place chicken between 2 sheets of waxed paper; flatten to 1/4-inch thickness, using a meat mallet or rolling pin.
  3. Sprinkle with salt and pepper; set aside.
