Lemon Chicken Cutlets
- 6 boneless chicken breast halves (1 1/2 lb.), skinned
- 1/4 tsp. salt
- 1/4 tsp. pepper
- vegetable cooking spray
- 1 Tbsp. margarine
- 1/4 c. dry sherry
- 1/4 c. chopped onion
- 2 Tbsp. grated lemon rind
- 2 Tbsp. lemon juice
- 1 c. water
- 1 tsp. chicken flavored bouillon granules
- 1/4 c. water
- 2 Tbsp. all-purpose flour
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. paprika
- 2 Tbsp. chopped fresh parsley
- Trim excess fat from chicken.
- Place chicken between 2 sheets of waxed paper; flatten to 1/4-inch thickness, using a meat mallet or rolling pin.
- Sprinkle with salt and pepper; set aside.
