Cilantro-Lemon Grilled Chicken
- 1/3 cup plain fat-free yogurt
- 1/4 cup chopped fresh cilantro
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon grated fresh lemon rind
- 2 teaspoons fresh lemon juice
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground cumin
- Cooking spray
- Combine first 6 ingredients in a large zip-top plastic bag; add chicken, and seal. Marinate in refrigerator at least 8 hours or overnight, turning bag occasionally.
- Preheat grill.
- Remove chicken from bag; discard marinade. Sprinkle chicken evenly with salt, pepper, and cumin. Place chicken on grill rack coated with cooking spray; grill 6 minutes on each side or until done.
