Raisin Oatmeal Crispies
- 3/4 c. shortening
- 1 c. brown sugar, firmly packed
- 1 egg
- 1 tsp. grated lemon rind
- 1 tsp. vanilla extract
- 1 c. sifted flour
- 1 tsp. cinnamon
- 3/4 tsp. salt
- 1/2 tsp. baking powder
- 2 c. oatmeal
- 1/2 c. chopped nuts
- 3/4 c. raisins
- Cream shortening and sugar together thoroughly.
- Blend in egg, rind and vanilla.
- Sift together flour, cinnamon, salt and baking powder.
- Sift flour mixture, oatmeal, nuts and raisins into creamed mixture.
- Drop by teaspoonful onto greased cookie sheet. Bake in 350u0b0 oven for 10 to 12 minutes.
- Allow to cool for a short time before removing from cookie sheet.
- Remove to wire rack to cool.
- Makes about 4 dozen cookies.
