Chicken And Chickpea Fattoush
- 1/2 cup fresh lemon juice
- 1/4 cup olive oil
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 garlic cloves, crushed
- 6 cups chopped romaine lettuce
- 1 1/2 cups shredded rotisserie chicken breast
- 1 cup chopped English cucumber
- 1 cup halved cherry tomatoes
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh flat-leaf parsley
- 2 (6-inch) multigrain pitas, torn into bite-sized pieces
- 1 (16-ounce) can chickpeas (garbanzo beans), rinsed and drained
- Combine first 6 ingredients in a large bowl, stirring with a whisk. Add romaine lettuce and remaining ingredients; toss gently.
